Spray Cracker. A type of cracker (q.v.) that has been spray-coated with a selected oil (q.v.) to impart to it an improved taste (q.v.), texture (q.v.) and appearance. The oil spray, which is usually limited to about 13% of the cracker weight, is normally applied at a temperature of 140¦F (60¦) to the crackers as they emerge from the oven (q.v.).
