Stearic Acid. A saturated fatty acid (q.v.) with a chain length of 18 carbon atoms (CH3(CH3)16CO2H), with a melting point (q.v.) of 157¦F (70¦C) and a boiling point (q.v.) of 709¦F (376¦C). It is the fatty acid most commonly found in natural vegetable and animal fats (q.v.) and makes up some 10% of lard (q.v.).
