Stephan Dough Mixer. A fully-automatic, high-intensity mixer (q.v.) that consists of a horizontally mounted drum-shaped mixer bowl (q.v.) that is jacketed (q.v.) for temperature (q.v.) control and whose kneading (q.v.) element rotates at a speed of 1,200 rpm, while a second and slower mixing element ensures that all of the dough (q.v.) batch receives uniform mixing. Full dough development (q.v.) is achieved within about 2 minutes.
