Straight Dough Process
Straight Dough Process. A system of dough (q.v.) production in which all of the dough ingredients are mixed together in one step to produce a single dough which is then fermented (q.v.) for the proper time before it is scaled (q.v.), moulded (q.v.), proofed (q.v.) and baked, thereby eliminating the need for a separate sponge (q.v.) or liquid ferment (q.v.).
