Substrate. Usually, a substance that is acted upon by an enzyme (q.v.), such as starch (q.v.) that is broken down into simpler carbohydrates (q.v.) by amylases (q.v.); also a substance that serves as a bacteriological medium, such as agar-agar (q.v.), on which stationary microbial colonies are grown.
