Sweet Dough Base. A mixture that combines in a concentrated form all the shortening (q.v.), sweeteners (q.v.), salt (q.v.), milk solids (q.v.), egg products (q.v.), emulsifiers (q.v.), and flavor (q.v.) systems called for by a sweet dough formula (q.v.), and requires the addition only of flour (q.v.), water (q.v.), and yeast (q.v.) to obtain a well-balanced sweet dough.
