Sweet Dough

Sweet Dough. Dough (q.v.) that contains relatively high levels of sugar (q.v.) as well as such enriching ingredients as shortening (q.v.), milk solids (q.v.), and whole eggs (q.v.). It is used to produce fermented (q.v.), cakelike products, such as cinnamon buns (q.v.), sweet rolls (q.v.), coffee cake (q.v.),and pastry products (q.v.) that normally include generous amounts of fillings (q.v.), and are generally topped with icings (q.v.), glazes (q.v.), jams (q.v.) or jellies (q.v.), nuts (q.v.), etc.
