Tough. A quality of being strong or firm in texture (q.v.), not brittle or tender, with a viscous consistency (q.v.), and yielding to force without breaking. A gluten (q.v.) is said to be tough when it requires greater than normal physical force to stretch, or a more extended fermentation (q.v.) period to mature it (q.v.) and to render it mellow.
