Tray Proofer. An automatic, multitier, final proofer (q.v.), consisting of a large enclosure, equipped with stabilized trays (q.v.) powered by continuous drive chains and traversing the length of the proofing chamber in a series of three to six laps. The trays, on being loaded with panned dough (q.v.) product, are elevated to the top tier and proceed horizontally back and forth in descending stages until they reach the discharge level.
