Tweedy Mixer. A high-intensity mixer (q.v.) that consists of a jacketed (q.v.) cylindrical mixer bowl (q.v.) provided with an impact mixer plate at its bottom and fixed baffles on the sidewalls. It is capable of fully developing doughs (q.v.) of batch weights up to 1,000 pounds in 5 minutes or less, with an energy input of 5 wh/lb within that time period, for an hourly dough production of 7,500 pounds.
