Vienna Bread. An elongated loaf (q.v.) of white hearth bread (q.v.) with a crisp, thick crust (q.v.), a chewy crumb (q.v.), and a pronounced wheaty flavor (q.v.), made from a rather lean dough (q.v.) that is sometimes augmented with 1 to 3% of malt syrup.
