Volumetric Method (for Gassing Power). A laboratory method for determining the capacity of yeast (q.v.) to generate carbon dioxide (q.v.), in which a sealed fermentation (q.v.) vessel containing a small sample dough (q.v.) is connected by a flexible tube to an inversely-calibrated burette that is inverted in a sodium chloride (q.v.) solution and collects the carbon dioxide gas produced by the sample dough over a given time period.
