Wash

Wash. A descriptive term applied to any thin, liquid coating (q.v.) which, when brushed on the surface of bakery goods prior to baking (q.v.), imparts a shiny or glossy surface to the crust (q.v.). Washes usually consist of aqueous suspensions (q.v.) of starch (q.v.), eggs (q.v.), sweeteners (q.v.), milk (q.v.), and similar materials.
