Wheat Endosperm. The major part of the wheat kernel (q.v.) amounting to as much as 92% of its weight and consisting principally of starch granules (q.v.) embedded in a matrix of gluten-forming proteins (q.v.), with minor amounts of lipids (q.v.), ash (q.v.), and vitamins (q.v.).
