Wheat Protein. Protein (q.v.) substances that occur in wheat (q.v.), generally grouped into four major classes or categories, namely, albumins (q.v.), globulins (q.v.), gliadins (q.v.), and glutenins (q.v.), with the latter two being involved in gluten (q.v.) formation when wheat flour is mixed with water (q.v.).
