White Cake. An aerated batter cake (q.v.) of variable shape that has as its major ingredients sugar (q.v.), flour (q.v.), shortening (q.v.), egg white (q.v.) and milk (q.v.), with minor amounts of baking powder (q.v.), salt (q.v.), and flavor (q.v.), and whose crumb (q.v.) is of a bright, white color.
