Yeast-Raised Doughnut. A doughnut (q.v.) made from a fermented dough (q.v.) requiring a final proof (q.v.) prior to frying (q.v.). It may be formed either by extrusion through a die (q.v.) or by being stamped from a sheeted dough by a cutter die. The fried product generally receives either a thin coating of sugar glaze (q.v.) or of granular sugar (q.v.) to enhance its sweetness.
