Domino Specialty Ingredients’ Brown Sugar Molasses is designed as a “painting” syrup to give food processors the flexibility to maintain desired brown sugar qualities with economic savings over soft brown cane or beet sugar. It can be “painted” onto granulated sugar by almost any mechanical dry mixing procedure or mixed with liquid sugar on a solids basis to achieve an equivalent molasses-to-sugar ratio. It can be labeled on food packages as “brown sugar” provided the sugar and molasses (at an 8 to 12% level, sugar weight basis) are mixed to uniformity before being added to the food.
