Natural tapioca-based ingredients from American Key Food Products offer alternatives to modified starches. Two styles — tapioca pearls and granulated tapioca — can thicken and texturize puddings, pie fillings and other popular foods. The pearls create round, soft, clear particles known as “fish eyes,” which impart a gentle mouthfeel. They come in green, red and yellow colors. Granulated tapioca provides a thick texture.
