Soft n’ Mighty, a new line of natural dough conditioners and crumb softeners, was introduced by Watson, Inc. These combination products can supplement, reduce or eliminate chemical dough conditioners such as SSL, DATEM, ADA, mono- and diglycerides and ethoxylated monoglycerides. They may be used to convert existing formulations to “all natural” status. These certified-kosher products work in conjunction with, or completely replace, existing enzyme systems while yielding superior softness throughout the shelf life of finished baked foods.
