The MECAFLOW divider from Mecatherm SA is specially designed for portioning baguettes, Parisian breads, batards, sandwich breads, etc. A patented calibrating system forms a large, thick strip of dough. The unit divides dough pieces in consistent shape and weight that are then moulded on one or several MECAFLOW moulders. It is also possible to not mould the dough pieces, making bread from dough pieces directly from the divider. The MECAFLOW process eliminates the need for extraction or extrusion that can modify and damage the dough. The dough does not stick or require much flour dusting. The limited amount of applied flour allows a perfect moulding process, and the seal resulting from the curling disappears completely. The divider uses little or no oil.
