The pea starch’s high amylose content (35%) gives it better thickening, gelling and filmforming properties than most native starches. It is also stable under high temperature, acidic and shear conditions . The starch undergoes a rapid increase in viscosity during cooling and assists with water binding in baked foods. It also helps improve crispiness and volume in extruded snacks.
