Farmer Direct Foods produces Natural s’Wheat 100% stone-ground whole-wheat flours in three granulations: regular, fine and mega fine. The company’s Identity Assured process tracks the wheat berries back to the farm and farmers who grow its hard white wheat varieties. The flour, with protein contents ranging from 12.8 to 13.2%, produces naturally sweet grain flavor notes in finished products. It has a lighter color than traditional whole-wheatflour milled from hard red wheat.
