All-natural, gluten-free CitraFiber from Natural Citrus Products Corp. not only adds dietary fiber to foods but is also high in antioxidants, pectin, vitamin A, vitamin C and iron. At 2.5%, it acts as a bread conditioner to improve texture and extend shelf life by two to four weeks and eliminates the need for BHT or BHA preservatives. At 1 to 2%, it improves the cohesiveness of muffins, and it has been found to improve the flexible strength of tortillas.
