Herza Schokolade, a producer of small chocolate shapes for the food industry, makes a variety of pieces for bakery use, including shavings, flowers, matchsticks and leaves as well as styles featuring inclusions of candy, biscuit and fruit bits. New are chocolate sticks 10 to 15 mm (0.4 to 0.6 in.) wide and up to 38.5 cm (15 in.) long. Bakers can break the sticks into the length they desire. A typical use, shown here, is to insert the bake-stable sticks into croissants before baking.
