Comax Flavors has developed authentic flavors inspired by traditional Hispanic cuisine, covering sweet to spicy. Latin fruits such as mango, papaya, passion fruit and lime top the list. The company also offers unusual fruit combinations such as guanabana, a mixture of strawberry and pineapple with an underlying creaminess of coconut or banana; acerola, also known as the Barbados cherry; and lulo, a citrus flavor described as a combination of rhubarb and lime. On the spicy side, flavor specialties include sofrito, a sauté of onion, garlic, oregano, cumin, bell peppers and tomatoes; chamoy, a Mexican delicacy combining salt, sweetness and heat infused in apricot; and cajeta, a Mexican confection of thickened syrup made from sweetened caramelized milk.
