Unlike other pigmented corn, the red color of Crimson Red Corn resides in its aleurone, not the seed coat, according to SK Food International. Thus, the corn does not lose its color during processing, so no additional color additives are required. The company recently completed a pilot run with Crimson Red Corn flour, resulting in new product applications such as cereal loops and puffs as well as extruded snacks.
