Four new dough conditioners from Pak Group LLC are tailored to the North American market. The new Bellarise dough conditioners are designed for specific types of baked foods. BR-1000 Red all-purpose dough conditioner provides volume and dough tolerance for all flour types and baking conditions. BR-1000 Green is a clean-label, all-purpose product for all types of bread applications. BR-1000 Blue for frozen dough improves elasticity to eliminate dough tearing and shredding and lengthens total shelf life. BR-1000 Brown Hearth & Artisan dough conditioner is for rustic breads produced in a “make and bake” operation using accelerated or delayed methods.
