Treha trehalose from Nagase America provides a crispy texture to snack crackers. The naturally occurring disaccharide also enhances shelf life of baked, extruded and fried snacks. Its functionality is similar to fructose but with greater stability and less sweetness. Composed of two glucose molecules bound as a disaccharide, the non-reducing sugar breaks down in the body into glucose but has a lower insulin response. It is distributed in the US exclusively by Cargill for food applications.
