Chocolate decorations simplified for bakers

Barry Callebaut is ramping up capacity to produce Mona Lisa chocolate decorations to include multi-colored pieces with more intricate designs and shapes, plus an assortment of filled inclusions. These improvements follow expansion of the company’s Henderson, NC, factory. Expanded capabilities include preparation of delicate open shapes, of solid designs for seasonal and special occasion uses, of marbled shapes, of multi-colored designs and of molded and filled inclusions. Ready for placement on cakes, cupcakes and other sweet baked foods, these chocolate decorations simplify preparation of eye-appealing goods in high-volume, mass production. They also help bakers prepare signature items for foodservice customers.
