BALTIMORE — Harry Tsakalos, co-founder of H&S Bakery, died Sept. 6. He was 93 years old.

Mr. Tsakalos, along with his father-in-law Isidore “Steve” Paterakis, purchased Olga and Son Bakery in East Baltimore in 1943, reopening under the name H&S, the letters representing their first names. They started by making Italian bread by hand and baking it in an old brick flat-hearth oven.

H&S Bakery was incorporated in 1962, setting its sights on the rapidly growing food service industry. Today, H&S Bakery is one of the largest bakers on the East coast, producing more than 100 varieties of bread, rolls and specialty items. A subsidiary, Northeast Foods Inc., has been a major supplier to McDonald’s since 1965 and is now the fast-food chain's largest supplier of buns in the United States.

Survivors include his wife of 70 years, Liberty; a son, Nicholas, and his wife, Jeanne; three grandsons, Harry, Michael (Sylvia) and Christopher (Triantafilia); and four great-grandchildren.
