CENTENNIAL, COLO. — Penford Food Ingredients has launched PenFibe CW, a non-bioengineered white corn fiber that is a minimum 80% dietary fiber. The ingredient has been shown to reduce calories when replacing higher caloric ingredients such as flour.

PenFibe CW has a neutral taste and is heat and pH stable. Potential applications include baked foods, cereal, breakfast and nutrition bars, gluten-free items, snacks, tortillas and sports nutrition products.

Penford has developed a ginger peach muffin prototype with PenFibe CW that has 5 grams of dietary fiber and 140 calories per serving. The prototype with PenFibe CW compares to a control ginger peach muffin prototype with 1 gram of dietary fiber and 150 calories per serving.
