SKOKIE, ILL. — Sethness Products Co. has introduced P600, a dark, low-sulfite Class III powdered caramel color. It may be used to help formulators stay below the Food and Drug Administration labeling sulfite threshold of 10 parts per million (p.p.m.). The P600 is 30% darker than P450, another Sethness dark, low-sulfite Class III powdered caramel color.

Potential applications for the P600 include meats, spice blends, cereal, baked foods, cocoa extenders, texturized vegetable protein (TVP) and hydrolyzed vegetable protein (HVP).

“Our new P600 Class III powdered caramel color may eliminate the need to list sulfite as an allergen on product labels,” said Dave Tuescher, technical director at Sethness. “Sulfite is a sensitizing agent, and in some countries like Canada, it is included in the allergens list. With P600, food formulators can confidently use this dark, positively-ionic charged caramel color with minimal sulfite labeling concerns.”
