How may dairy be done differently?
Adding functional ingredients to dairy products makes sense to Steve King, founder, 3D Dairy Foods, Milwaukee.
It is with this belief that Mr. King created 3D Dairy Foods, with the “3D” standing for “Dairy done different,” the company’s slogan. “I want to emphasize that we plan to be different in everything we do as a business,” he said.
The company’s vision is to extend and expand the healthy halo of dairy foods to all meal occasions and to all consumers, from younger to older. To accomplish this, Mr. King partnered with Westby Cooperative Creamery, a cooperative of family dairy farms in Westby, Wis., for the production of the multi-concept line of CheeBrands NutriDairi Foods.
The array of dairy products will help address obesity and weight problems, diabetes, heart health, bone/joint health, brain function, digestive disorders, vitamin deficiencies and the aging population.
The first two concepts — Cheeserts NutriDairi Dessert and Cheenaks NutriDairi Snack — just started rolling out. The cottage cheese-style products are based on soft, small cheese curds in a flavored creamy sauce ranging from crème brulee to pecan peach to vanilla custard.
“We don’t call them cottage cheese because our research showed us that more than half of consumers don’t even want to try a product labeled cottage cheese,” Mr. King said. “Once we decided to not call it by a standard of identity name, we started tweaking the formulation to make it even more delicious and nutritious.”
The 5.5-oz single-serve cups carry the logo of NutriFusion L.L.C., Hilton Head, S.C., and state the product is enhanced with natural vitamins, including A, B, C, D and E. This comes from the addition of an ingredient complex of nutrients obtained from whole food concentrates of orange, cranberry, apple, strawberry, cherry, blueberry and shitake mushroom.
Future CheeBrands NutriDairi concepts include a line of breakfast bowls, dips and side dishes.
