More than 150 attendees hear presentations on baking industry trends, clean label ingredients.

MUNICH, GERMANY — A two-hour seminar on global health trends sponsored by Lallemand and held on Sept. 15 at iba 2015 was attended by more than 150 participants, according to Lallemand.

The seminar highlighted four topics.

Peter Becker, president of the Central Association of German Bakers, discussed the various global trends influencing the baking industry.

Annemarie Halter, business development manager for organic yeast — Lallemand, and Nicolai Jensen, general manager, Denmark, Lallemand, highlighted organic food trends with an update of the market situation, as well as tips on how they use organic yeast for bakery goods. An overview of the Danish organic market also was provided.

Jan van Eijk, R.&D. director for Lallemand Baking Solutions, discussed developments to extend mold-free shelf life using clean label ingredients and technologies.

Finally, Chris Newbold, bakery technologist at Marks & Spencer, presented “Vitamin D in Bread.” M&S, one of the U.K.’s leading retailers with more than 1,330 stores worldwide, this past summer launched a line of bread and rolls containing vitamin D yeast. Mr. Newbold’s presentation covered the journey behind the launch, highlighting vitamin D deficiency and consumer research supporting their strategy.
