“I’m not sure about that,” Ms. Dornblaser said. “I don’t think it will be a destination ingredient. I don’t think consumers will say, ‘I want that.’ … I think that’s one where the appeal is going to be what that end result product is. If that’s being able to make a mayonnaise-like product that tastes like mayonnaise but doesn’t have any eggs, then I can see where that would really work. Otherwise I think it’s a bit of a hard sell.
“But then, if it’s an egg white substitute, then that becomes something that’s perfect for vegans. And that’s a big deal. Because veganism is hot.”
