Clear Valley omega-3 shortening from Cargill represents an industry first to help bakers produce cookies, crackers, breads, buns and bars with a nutrient claim for ALA omega-3. The company described the new shortening as a “drop-in solution” for formulating shelf-stable foods that require a 9- to 12-month shelf life. The shortening has a clean, neutral flavor that won’t impart off-tastes or require a masking agent. The company reported that the omega-3 content comes from a reliable source that is managed as an identity-preserved crop, thus ensuring supply and quantity. In a recent American Heart Association study, 45% of consumers said they look for more healthy oils and fats in their foods and beverages, and 63% added omega-3 sources to their diet in 2008.
