The Evolution roll line from WP Kemper Bakery Systems now comes with an integrated donut module. Unlike current production systems, where dough pieces are cut to have inner and outer edges, the WP Kemper donut module cuts dough pieces only on the inner side. Just one cutting edge produces a better skin on the product and slows down and reduces the absorption of fat. With this module, bakers may have only 5% in dough waste, resulting in significant raw material savings. Current comparable donut production methods have around 35% waste.
