Adding arrowroot and native pea starches, American Key Food Products expands its line of natural clean-label ingredients. Like its other native starches and fibers, these are free of GMOs, gluten and allergens. Native pea starch can substitute for potato starch, currently in short supply. It exhibits characteristics similar to potato starch and has neutral taste and color. It resists shearing and is stable in high-temperature cooking — characteristics normally associated with chemically modified starches. Native pea starch, thus, allows a clean-label approach. Arrowroot starch gelatinizes at lower temperature and is useful in gluten-free baking.
