Comfort Cake, Chicago, IL, offers classic and sugar-free versions of its trans-fat-free Luscious Lemon cakes. Made from scratch, the cakes have a Southern-style taste and moist texture. The sugar-free version features the company’s own Sugarless Sweetness 1:1 sugar replacement, which is made from a proprietary blend of low-glycemic sugar alchohols for bulk, sweetness and browning. Founded in 2001, the company distributes its cakes nationally through food service and retail channels, soon to include Wal-Mart, and it sold out of its Sugarless Sweetness lemon slices during a recent feature on the Home Shopping Network.
