With guar prices at historic highs, Gum Technology recommends Coyote Brand tara gum and blends as a suitable alternative. Tara belongs to the same family of galactomannan-bearing seeds and contains a 1:3 ratio of galactose to mannose, while guar has a 1:2 ratio of these components. Like guar, tara is cold-water-swelling and pseudoplastic. Its viscosity is similar to guar in cold water, and tara hydrates fully after heating, raising its viscosity 20% when compared with the cold solution. Tara combines synergistically with other gums such as xanthan and carrageenan.
