When placed atop baked foods that go through freeze/thaw processes, regular sugar and salt crystals can take up moisture and dissolve, thus losing their desired identity and eye appeal. QualiTech introduced three specially coated topping sugars and salts that eliminate this problem: Encapsulated Sugar, Encapsulated Cinnamon and Sugar, and Encapsulated Salt. Applications include topical use on muffins, pastries, cookies and other baked foods, while the cinnamon and sugar also can be used internally in frozen waffles. The salt works well on frozen soft pretzels and similar baked foods. The encapsulated crystals can be frozen and microwaved and will not dissolve.
