To enable use of caramel color in compound coatings, seasonings, batters and other foods, DDW has developed an improved oil-dispersible caramel color using proprietary emulsion technology. The new color provides a 25% increase in color intensity compared with previous styles, while its solubility has been improved in liquid systems that contain lipids. It can be labeled as “caramel color” in the ingredient statement on package labels. Samples are available on request.
