“The Red Hot Report” from the Cherry Marketing Institute highlights the scientific and formulating benefits of tart cherries. Described as naturally functional “super fruits,” tart cherries are rich in antioxidants, anthocyanins 1 and 2, potassium, magnesium and beta carotene. Dried cherries such as those in the cherry scones illustrated here carry an ORAC value of 6,800 units per 100 g. They have low water activity and function as natural antibacterials and mold inhibitors.
