With agar now in scarce supply, Ticaloid DG 671 from TIC Gums performs like agar in icings and glazes and saves up to 21% of cost-in-use over agar. The stabilizer, a combination of hydrocolloids, produces the viscosity and stability of agar in icings while limiting water migration. Used in glazes at 0.17%, based on powdered sugar weight, the stabilizer demonstrates comparable functionality to agar at 0.20%. It also shows even waterfall flow when put through glazing equipment.
