This is a process for producing a set expanded food. It requires passing a soft expanded food composition at a specific temperature and pressure into a second area with lower temperature and pressure. The initial food composition may be in a partially expanded condition and contain a vaporizable expanding agent. The pressure and temperature differences help the food further expand by evaporation of the vaporizable expanding agent.
