A starch, a gluten-free gas-retaining polymer and a gluten-free setting polymer are used to formulate gluten-free bread dough while helping to mimic gluten’s functions. The finished bread has a specific volume of between 4 and 6 cc per g and is safe for consumption by those who have a gluten intolerance, allergy or sensitivity.
