MONTREAL — Lallemand Inc. has completed its acquisition of the Lake States Yeast Division from the Wausua Paper Group, Lallemand said Aug. 5. Lake States Yeast, based in Rhinelander, Wis., produces inactivated torula yeast.

Lake States Yeast L.L.C. will operate as a separate unit within Lallemand. Its product portfolio will be integrated in the Lallemand Bio-Ingredients division and complement inactive yeasts and yeast extracts produced in Montreal; Salutaguse, Estonia; and Grenaa, Denmark.

"Today, the term ‘inactive yeast’ is synonymous with nutrition," Lallemand said. "The food and nutraceutical industries actively recognize the health benefits of consuming inactive nutritional yeast."
