BISMARCK, N.D. — North Dakota Mill & Elevator said it will begin selling 5-lb bags of all-purpose organic flour and white whole wheat flour in grocery stores in September. Previously the mill only had sold the flour as a specialty product to bakeries and restaurants.

The mill already sells whole wheat flour made from hard red spring wheat, but Vance Taylor, manager of North Dakota Mill & Elevator, said the white whole wheat flour has a milder flavor and is popular with children.

North Dakota Mill & Elevator purchases hard white spring wheat from the Dakota Pride Cooperative, a co-op of more than 200 producers based in Jamestown, N.D.

Sales of “family flour” and other grocery store products make up 2% of the mill’s business, and organic flour accounts for approximately 1%. Mr. Taylor said both segments are growing.
