The Flavor and Extract Manufacturers Association has determined that sucrose enhancer S6973 from Senomyx, Inc., San Diego, is Generally Recognized As Safe (GRAS) for use in baked foods, cereals, gum, condiments, relishes, confectionery items, frostings, frozen dairy products, fruit ices, gelatins, puddings, hard candy, soft candy, jams, jellies, milk products and sauces, according to Senomyx.

The enhancer, developed through Senomyx’s proprietary taste receptor technologies, enables the reduction of up to 50% of the sucrose present in product prototypes while maintaining the taste of natural sugar.

"By enabling a meaningful reduction in sugar content without altering the sweet taste, S6973 could allow manufacturers to offer appealing products with lower calories and improved nutritional profiles," said Kent Snyder, chief executive officer of Senomyx.

The Flavor and Extract Manufacturers Association, Washington, determined the GRAS status under the provisions of the Federal Food, Drug and Cosmetic Act administered by the Food and Drug Administration.
